We\u2019re at a Chase Bank in Tribeca. Not the part with cobblestone streets, $20 million lofts, and boutiques that sell $500 Japanese denim jeans. The part east of West Broadway that bleeds into the <a href=\"https:\/\/www.vanityfair.com\/news\/1997\/12\/age-of-excess\" target=\"_blank\" class=\"text link\">grit of the Financial District<\/a>, the skyscrapers so tall and the streets so narrow that sunlight doesn\u2019t reach much at all. We\u2019re standing under fluorescent lights in a room that smells of Lysol, near a teller behind plexiglass. No one would describe this as \u201ccool.\u201d<\/p>\n<p>The 23-year-old is hyperfocused on cool right now, because blocks away, he\u2019s making <a data-offer-url=\"https:\/\/www.grubstreet.com\/article\/george-mcnally-faux-restaurant-nyc.html\" class=\"external-link text link\" data-event-click=\"{&quot;element&quot;:&quot;ExternalLink&quot;,&quot;outgoingURL&quot;:&quot;https:\/\/www.grubstreet.com\/article\/george-mcnally-faux-restaurant-nyc.html&quot;}\" href=\"https:\/\/www.grubstreet.com\/article\/george-mcnally-faux-restaurant-nyc.html\" rel=\"nofollow noopener\" target=\"_blank\">a restaurant called Faux<\/a>. And it stays open late. \u201cIt\u2019s impossible to get food anywhere after 11, midnight,\u201d he laments of the city that supposedly doesn\u2019t sleep. Downstairs he\u2019s building a lounge where guests can linger. Right now the vision is still under construction. Which is why we are at the bank. To make something cool involves an uncool process of zoning permits, building codes, and cash withdrawals. \u201cI have to be so boring about stuff right now,\u201d he says, stuffing a wad of bills into his wallet. Several black tattoos, including one of a cocktail glass, flex across his arms.<\/p>\n<p class=\"paywall\">He may seem young to be opening a restaurant, yet most men his age are not a son of <a href=\"https:\/\/www.vanityfair.com\/culture\/story\/keith-mcnally-proust-questionnaire\" target=\"_blank\" class=\"text link\">Keith McNally<\/a>, the man who made <a href=\"https:\/\/www.vanityfair.com\/style\/2020\/12\/requiem-for-a-dream\" target=\"_blank\" class=\"text link\">Balthazar<\/a> and <a href=\"https:\/\/www.vanityfair.com\/style\/story\/washington-restaurants-trump-true-colors\" target=\"_blank\" class=\"text link\">Minetta Tavern<\/a>, to name only two; they\u2019re not a nephew of Brian McNally, Keith\u2019s brother who did Indochine. The McNally family holds a deep lore in New York: Despite being English born and raised, they opened the very eateries that defined and inspired the city\u2019s downtown culture. Jay McInerney waxed poetic about The Odeon in <em>Bright Lights,<\/em> <em>Big City.<\/em> In the 1990s, <em>Sex and the City<\/em> dedicated an episode to Samantha and Carrie trying to get into a thinly veiled Balthazar. Can George own the Gen Z night?<\/p>\n<p class=\"paywall\">While a \u201cchild of\u201d in acting or modeling would send nepo baby accusations flying, the margins of the restaurant business are too tenuous for anyone to seem to care. As <a href=\"https:\/\/www.vanityfair.com\/story\/dominic-sessa-became-anthony-bourdain\" target=\"_blank\" class=\"text link\">Anthony Bourdain wrote in <em>Kitchen Confidential<\/em><\/a><em>:<\/em> \u201cNever having had a Friday or Saturday night off, always working holidays, being busiest when the rest of the world is just getting out of work, makes for a sometimes peculiar worldview.\u201d<\/p>\n<p class=\"paywall\">That worldview is the only one McNally has ever had, first as a child among the red leather booths of his father\u2019s restaurants, then as a teenager working in a London pub. A stint in nearly every position in the back and front of house followed: busser, dishwasher, waiter, bartender. The elder McNally wasn\u2019t sold when he saw the potential Faux space. George signed the lease anyway.
